Ravioli in a Brown Butter

  • packaged ravioli such as Rosetto Brand Italian Style with Sausage
  • 4 T unsalted butter
  • 1 T olive oil
  • 1 T good quality parmesan cheese
  • pinch red pepper flake
  • 1 t fresh sage leaf thinly sliced
Instructions
  1. clarify butter removing a milk solids
  2. brown the clarified butter in a pan (preferably stainless steel) unit nutty
  3. boil the pasta per package instructions and cooking until very al dente.
  4. heat the oil in a large saute pan
  5. drain pasta and add to the saute pan and cook the pasta until golden brown turning once about 3 minutes per side
  6. and the browned butter to the saute pan then toss the ravioli in the browned butter add sage and toss to coat and plate.
  7. sprinkle with cheese and pepper flake to taste
