Happy New Year Peas
- 1 pound dried black-eyed peas
- 1 pound mild sausage, or your favorite
- 1 small onion, chopped
- 3 T dark brown sugar
- 1 T prepared mustard
- 1 t salt
- 1 C Blues Hog barbecue sauce
- Rinse, prepare, soak, and cook peas in about 6 cups water, following directions on the package.
- Drain and reserve the cooking liquid.
- In an enameled cast iron pot over medium heat, brown sausage and onions until onions are golden brown and sausage is almost crispy;
- drain off excess fat.
- Stir in brown sugar, mustard, and barbecue sauce each in order individually and stirring until completely incorporated.
- Stir in reserved liquid to achieve a soupy consistency. typically ½ to ¾ of the reserved juices.
- Bake covered at 300° for 1 to 1½ hours.
