Happy New Year Peas

Ingredients
  • 1 pound dried black-eyed peas
  • 1 pound mild sausage, or your favorite
  • 1 small onion, chopped
  • 3 T dark brown sugar
  • 1 T prepared mustard
  • 1 t salt
  • 1 C Blues Hog barbecue sauce
Instructions
  1. Rinse, prepare, soak, and cook peas in about 6 cups water, following directions on the package.
  2. Drain and reserve the cooking liquid.
  3. In an enameled cast iron pot over medium heat, brown sausage and onions until onions are golden brown and sausage is almost crispy;
  4. drain off excess fat.
  5. Stir in brown sugar, mustard, and barbecue sauce each in order individually and stirring until completely incorporated.
  6. Stir in reserved liquid to achieve a soupy consistency. typically ½ to ¾ of the reserved juices.
  7. Bake covered at 300° for 1 to 1½ hours.
