Lemon Flake Cake
 
 
Ingredients
  • 1 box lemon cake mix
  • 1 (3 oz.) box lemon jello
  • ¾ C oil
  • ¾ C water
  • ½ t lemon extract
  • 1 bit almond extract
  • 4 eggs
  • For the glaze:
  • 1½ C of powdered sugar
  • 4 T fresh lemon juice
  • zest of 1 lemon
Instructions
  1. Preheat Oven to 350 Degrees
  2. Treat a 9X13 glass baking dish with either butter and flour or baking spray with four.
  3. Mix the ingredients and beat 4 minutes with electric mixer.
  4. Pour into greased and floured 9 x 13-inch pan.
  5. Bake in 350 degree oven until done, about 30 minutes.
Notes
Five minutes before cake is done, mix 1½ cups of powdered sugar with 4 T fresh lemon juice and the zest of 1 lemon; set aside

The cake is finished baking when a pick comes out clean.
Use a large wood skewer or chopstick and poke holes approx. ½ inch apart over the entire surface of the cake.
cool cake on counter for 5 minutes
pour glaze over cake evenly
