Grandma Chapin's Favorite Lemon Pie
- 1 C sugar
- ¼ C cornstarch
- ¼ t salt
- 1½ C boiling water
- 2 egg yokes
- ⅓ C lemon juice fresh
- 1 T butter
- pre-baked pie crust
- combine sugar, corn starch and salt
- add boiling water to to sugar mixture over a double boiler
- stirring constantly until smooth
- cover and cook 15 minutes
- beat egg yokes then slowly stir into sugar mixture and cook stirring constantly for 5 minutes
- remove from double boiler and add lemon juice and butter
- mix until smooth and cooled
- pour mixture into pie shell and allow to cool completely.
- top with meringue or topping
