3D Hollandaise Sauce
- 6 egg yokes
- 12 T unsalted butter, softened
- ½ cup boiling water
- 2 t fresh lemon juice
- Tabasco or Cayenne to taste
- set up a double boiler and get water simmering over medium heat
- add yokes and softened butter to the work bowl
- squeeze lemon juice and reserve
- measure ½ cup of water in microwave safe measuring cup and bring to boil
- place work bowl over double boiler and immediate add the water
- STIR CONSTANTLY UNTIL THICK
- cook to 160 degrees
- remove from heat and stir in lemon juice and Tabasco or Cayenne
Leftovers....save for 3 days but its never made it that long before its eaten
