Roasted Garlic White Sauce for Pizza
- 1 medium onion diced very fine
- 1 medium bulb of roasted garlic
- 6 T olive oil
- 3 C whole milk
- 2 t dried basil
- 2 t dried oregano
- 1½ t salt
- ½ C grated parmesan cheese
- pepper to taste
- 2 T flour
- For the Roasted Garlic
- Preheat oven to 400
- Cut the root end off the bulb of garlic and place in a foil pouch.
- Cover with 1 t olive oil and a generous pinch of kosher salt
- Roast in oven 1 hour or until garlic is fragrant and soft.
- For the Sauce
- Preheat a 12 inch skillet on medium high until hot
- Add olive oil to pan and allow to quickly warm. Add onions all at once and sauté until translucent
- Add flout and cook until flour has coated the onions and absorbed the oil in the pan.
- Add basil and oregano and salt and stir add milk and cook until thick
- Add roasted garlic and stir
- Add parmesan cheese and allow to melt while stirring constantly.
- Cool sauce to room temp stirring often to ensure a smooth sauce
