Mmmmm...Butter Cake
- 2 sticks unsalted butter
- 1½ C AP flour
- 1 C cake flour, not self-rising
- 1½ t baking powder
- ½ t salt
- 1 egg, lightly beaten
- 4 egg yolks
- 1 C sugar
- Brown Butter
- place 1 stick of butter in a cold skillet over medium low and all to melt completely.
- once melted turn heat up on pan to medium and swirl pan and allow the butter to brown
- allow butter to come to room temperature while browned butter cools to room temperature
- Prep tart pan, preheat oven
- preheat oven to 350
- butter a 9 inch removable bottom tart pan
- Dry Ingredients
- sift both flours salt and baking soda into a large bowl
- Wet Ingredients
- beat egg yokes and sugar on medium high for 3 minutes
- add butter to eggs in 4 batches making sure it fully incorporates
- add flour to butter sugar egg mixture and mix until smooth and no dry four remains
- transfer to pan and smooth top with offset spatula
- Final Preparation
- refrigerate cake for 30 minutes
- brush top of cake with beaten egg.
- create design in top of cake with back side of knife
- brush one more time with egg wash
- bake for up to 35 minutes. if top is browning too quickly cover with foil
- cool cake slightly on wire rack
- remove from pan and slice while still warm
