Bitchin Broccoli Cheese Soup
- 1 stick of butter
- 1 medium sweet onion, diced
- 4 carrots, peeled and shredded
- 1 ½ ribs of celery diced fine
- 1 T minced Garlic
- ½ C flour
- Nutmeg to taste
- 32 oz low sodium chicken broth
- 2 lbs frozen broccoli florets
- 4 C whole milk
- 2 lbs Velveeta queso blanco, cubed into 20 blocks
- 4 oz sharp white cheddar
- White pepper
- Salt
- Garnish with sriracha
- heat the butter in a dutch oven over a medium low flame
- add onion, carrot and celery and cook until just beginning to brown
- add garlic and stir for 30 seconds
- add first helping of nutmeg and cook until fragrant
- add flour and cook for 2 minutes
- add chicken broth and stir until four is completely incorporated and bring to boil
- add broccoli and cook for 10 minutes at very low boil stirring often
- go crazy with the stick bender or blend in small batches in a blender
- add milk and bring to simmer and reduce heat to low.
- add queso blanco a block at a time until fully melted
- slowly add cheddar add white pepper and salt to taste and serve
