Shredded Potato Cakes
 
 
Ingredients
  • 2 C Yukon Gold potatoes (shredded)
  • ¼ C chopped red onions
  • ¼ C chopped red bell peppers
  • ¼ C chopped scallions
  • ¼ C AP flour
  • 2 eggs
  • salt and pepper
  • peanut oil
Instructions
  1. Shred potatoes and mix all ingredients together.
  2. In a pan, add peanut oil about ½-inch to ¾-inch deep.
  3. Heat oil to 325 use 2 to 3 tbsp. of potato cake mixture.
  4. Place as many as will fill in the pan. Cook approximately 2 minutes each side until light brown.
  5. Turn heat up on oil to 375 return cakes to pan and crisp
  6. season to taste with additional salt and pepper
