Shredded Potato Cakes
- 2 C Yukon Gold potatoes (shredded)
- ¼ C chopped red onions
- ¼ C chopped red bell peppers
- ¼ C chopped scallions
- ¼ C AP flour
- 2 eggs
- salt and pepper
- peanut oil
- Shred potatoes and mix all ingredients together.
- In a pan, add peanut oil about ½-inch to ¾-inch deep.
- Heat oil to 325 use 2 to 3 tbsp. of potato cake mixture.
- Place as many as will fill in the pan. Cook approximately 2 minutes each side until light brown.
- Turn heat up on oil to 375 return cakes to pan and crisp
- season to taste with additional salt and pepper
