Roasted Maple Carrots with Browned Butter and Bacon
- 2 lbs carrots fresh ones with the tops preferably
- 5 oz. bacon lardons
- 1 T water
- 1½ t rendered bacon drippings
- ½ t table salt
- 1 T butter
- 1 T maple syrup
- Oven to 475-500 range
- add bacon and water to cold cast iron skillet
- stir to combine and cook, stirring as needed.
- remove bacon when crisp and add carrots and salt
- spread into single layer and roast 10 minutes.
- add butter and mix well cooking butter in the heated pan until browned.
- add maple syrup and coat carrots completely
- return to oven for about 8 minutes stirring once or twice or until GBD.
- add bacon back to pan and return to oven for 1 minute.
- serve
