Eric's Favorite Flank Steak
 
 
Ingredients
  • 2lb Flank Steak
  • 6 T Olive Oil
  • 6 Medium Garlic Cloves
  • 1 Medium Shallot
  • 2 T Rosemary Leaves (FRESH ONLY)
  • Kosher Salt
  • Fresh Cracked Black Pepper
Instructions
  1. Poke the steak on both sides with a fork all over.
  2. Season with Kosher Salt and Fresh Ground Pepper on BOTH sides
  3. Puree the above ingredients after completing the above two steps allowing a few minutes for the salt to draw out some moisture from the meat.
  4. Blend the ingredients until smooth
  5. Place Salt and Peppered Steak in a Zip Top Bag
  6. Pour Puree in to bag and make sure the rub covers the entire steak.
  7. Leave Rub on steak for at least one hour but up to 24 message the rub into the meat every 8 hours.
  8. Bring steak to room temp prior to grilling.
  9. Grill then let rest under a foil tent for 5 to 10 minutes ( that really makes a big difference)
