Crispy-Sweet Pork and Onions
 
 
Ingredients
  • 2 lbs. pork shoulder trimmed of fat and sliced to ⅛th inch thick slices
  • ½ C + 4 T soy sauce, divided
  • 1 T sesame oil
  • 1 C Canola oil
  • cornstarch to coat pork
  • 1 T ginger, minced
  • 1 t garlic, minced
  • ½ C chicken broth
  • 1 t red chile flakes (optional)
  • 4 T dark brown sugar
  • 2 T cornstarch mixed with 2 T water
  • 1 medium sweet onion, Sliced on the bias to form nice strips
  • 1 bunch green onions finely slice greens tip to get ¼ cup for garnish chop the rest into 1 inch chunks
Instructions
  1. Mix soy sauce and sesame oil and pour over pork.
  2. Stir well and marinate for 30 minutes
  3. Saute onion strips and green onion chunks in wok over high heat until they begin to caramelize and set aside
  4. Remove pork from marinade and pat excess with paper towels, then working in small batches coat with cornstarch and allow to rest for 5 minutes prior to cooking
  5. Heat canola oil in wok till it shimmers.and fry pork in batches so that the wok in not too crowded.
  6. when crispy and cooked through place pork on paper towels to remove excess fat.
  7. When all the pork is cooked clean wok and return to medium high heat with 1T canola oil.
  8. Add Garlic, pepper flakes and Ginger, saute for 30 seconds then all chicken broth and soy sauce and cook for 1 minute or until mixture boils.
  9. Add brown sugar and stir well.
  10. Add slurry my mixing cornstarch with cold water then pour into sauce and stir until thickened.
  11. Add onions an pork to sauce and stir to coat.
  12. Plate and garnish with green onion slices and server immediately.
