Apple Cider Baked Beans
 
 
Ingredients
  • 3 C dried pinto beans
  • 4 C fresh apple cider
  • 8 oz salt pork, thinly sliced
  • 2 small yellow onions, chopped to 1 inch chunks
  • 6 T mild molasses
  • 1 T dry mustard
  • 1 T dry smoked paprika
  • Hot Water as needed
Instructions
  1. Pick over the beans, discarding any stones and ugly beans
  2. Rinse well and place in a 2 quart lexan and cover with 3 inches cold water top with lid and let sit on counter for 12 hours.
  3. Freeze the salt pork for 1 hour prior to slicing to aid in slicing thinner pieces.
  4. Drain the beans and transfer them to a heavy span.
  5. Add the cider and slowly bring the beans to a boil over medium heat. Gently boil, uncovered, for about 30 minutes.
  6. Preheat the oven to 300°F.
  7. In a small saucepan, combine the molasses, dry mustard, and paprika and place over medium heat until the spices dissolve into the molasses.
  8. Remove from the heat and drain the beans, reserving the cooking liquid.
  9. Layer half of the salt pork slices on the bottom of a bean pot.
  10. Gently mix chopped onion, molasses mixture and beans
  11. Pour the mixture in to bean pot and then top with the remaining salt pork slices. Add the reserved cooking liquid to the pot. Add hot water as needed to cover the beans with liquid. Cover the pot.
  12. Bake for 4 hours, then uncover the pot and add more water if the beans seem dry. Recover and continue to bake for 1 to 2 hours, until the beans are tender.
