Maple Butter
- 8 oz grade A dark amber maple syrup
- 1 two-inch cinnamon stick
- 2 sticks softened butter (divided)
- Pour maple syrup into a medium saucepan; add cinnamon.
- Bring to a boil over medium-high heat.
- Cook until a candy thermometer registers 240 degrees.
- Remove the pan from heat, discard cinnamon stick, and stir in 1½ sticks unsalted butter until melted.
- Immediately transfer to a stand mixer fitted with the paddle.
- Beat, starting on low for 1 minute then medium for 2 minutes and finally high for a full 5 minutes.
- Add the remaining ½ stick unsalted butter and mix until mixture is thick, opaque, and creamy
