Fresh Cranberry Sauce
- 2 ½ C sugar
- 1 ½ C water
- ½ t ground cloves
- ½ t ground allspice
- ½ t ground saigon cinnamon
- 2 bags fresh cranberries
- Zest of 2 oranges.
- Add sugar, water and spices and cook, stirring often, until sugar dissolves, syrup is clear and comes to a rolling boil
- Pick over the cranberries to remove any mushy ones.
- Add cranberries to syrup and continue cooking, uncovered, until they begin to pop
- Be careful not to cook them too long or they will get mushy.
- Remove from heat, stir in orange zest and cool uncovered.
