Whole Smoked Turkey in the Bradley Smoker

  • Batch Apple and Spice Brine
  • 14 lb turkey or two (fresh and minimally processed.
  • Time....Lots of Time.
  • Applewood Biscuits
  • Bradley Smoker
Instructions
  1. This recipe is more about procedure than ingredients but what matters most is that you follow the schedule below.
  2. Monday Make the brine make the brine and allow to cool completely.
  3. Tuesday Brine the bird I use a clean 5 gallon bucket that i put in the fridge the every so often I will take the bucket out of the fridge and give it a quick stir and halfway through I rotate.
  4. Wednesday Dry the bird The skin must be completely Dry before it hits the smoker. If there is any moisture left on the skin it won't crisp until after that moisture is gone. I often use a camping tent battery powered ceiling fan inside the fridge blowing air on the surface of the birds to aid in
  5. Thursday Smoke the bird. I set the heat for 225 and smoke the bird for 4 hours using only applewood biscuits. Then continue to cook until safe temperatures are reached.
