Eric's Pickled Red Onions
- 1 red onion
- ½ C apple cider vinegar
- 1T local Honey
- 1½ t kosher salt
- 1 t vanilla sugar
- Slice the onion very thin and set aside
- Mix salt, sugar, honey and vinegar until solids dissolve.
- Add onions into liquids and toss to combine
- Cover with plastic and press down onto surface of onions so they are all submersed in the vinegar mixture.
- Rest 1 hour at room temp.
- Move to airtight and refrigerate
