Chocolate Cream Pie
- ⅔ C sugar
- ¼ C cornstarch
- ½ t salt
- 4 egg yolks (reserve 1 white)
- 3 C whole milk
- 5 oz. bittersweet chocolate
- 2 oz. semisweet chocolate,
- 2 T unsalted butter
- 1 t vanilla extract
- oreo ready made pie crust
- Cool Whip Extra Creamy
- bittersweet chocolate for shavings.
- Preheat Oven to 375
- Spread the egg white over the crust or I often break the crust out of the pan and press it into a tart pan.
- Bake crust 5 minutes
- Cool Crust while you make the custard.
- Combine the sugar, cornstarch and salt in a saucepan
- In a bowl whisk together the milk and egg yolks.
- Add the milk mixture to the saucepan whisking until the smooth.
- Cook over medium heat until the mixture starts to thicken
- Immediately turn the heat down to a simmer stirring until thick.
- Off heat, whisk in the chocolate, butter and vanilla extract.
- Transfer to a bowl. Press a piece of plastic directly over surface
- refrigerate until cool, 1-2 hours.
