CHEEEEZY!

Cheesy Corn Bake is a side dish that you need to make today. This recipe is great as is but can be changed to accommodate other meats and or spice. On the rare occasion you have left overs reheat and enjoy as a dip.

Cheesy Corn Bake
 
Ingredients
  • 4 T Butter
  • 4 T AP Flour
  • ⅛ t Garlic Powder
  • 1 C whole Milk
  • 6 oz. Sharp white Cheddar Cheese (shredded)
  • 3 oz. Cream Cheese (cubed)
  • 30 oz. Whole Kernel Corn (thawed)
  • 3 oz. Diced Ham
  • 3 oz. Green Chile ( or poblano peppers) fire roasted peeled and chopped
Instructions
  1. Preheat oven to 350 Degrees
  2. In a large saucepan melt butter
  3. Stir in Flour and Garlic Powder
  4. Add Milk all at once
  5. Cook stirring constantly over medium heat until thick and bubbly.
  6. Slowly stir in cheese and cream cheese.
  7. Cook stirring constantly until smooth over low heat.
  8. Stir in Ham and coat completely.
  9. Stir in Green Chile and coat completely.
  10. Stir in Corn and coat completely.
  11. Transfer to a 10 inch cast iron skillet
  12. Bake at 350-400 degrees for till bubbly and GBD.
