St Louis Style Pizza in Raymore.... you don't have drive 257 miles east for great thin crust pizza with home-made Provel. No Yeast dough means it takes longer to heat the oven that make the crust.

Ingredients
  • 4 cups all-purpose flour
  • 4 tablespoons cornstarch
  • 4 teaspoons sugar
  • 2 teaspoon baking powder
  • 2 teaspoon salt
  • 2 c water plus extra as needed
  • 4 teaspoons olive oil
  • ¾ lb provel per 12 inch pizza
  • 2 part white american
  • 1 part swiss
  • 1 part provolone
  • liquid smoke to taste. Careful here... a little goes a long way.
Instructions
  1. This recipe is more about how to make a no rise cracker thin crispy pizza crust. This recipe is for 2 crusts.
  2. Mix all dry ingredients add water
  3. Form ball rest 15 minutes
  4. Roll to 12 inch round
  5. Top and bake 500 for just a few minutes till edges are crisp and
  6. For the provel cheese
  7. grate the cheeses then freeze for a half hour to harden
  8. Working in batches add the cheese to a food processor and process to fine then toss with liquid smoke.
