Who is this Reverend Eric?
I grew up cooking. Blessed to have a grandmother that could bake and make treats that the whole family loved and a dad that cooked on the Great Northern Rail Road. My first job in a restaurant when i was 14 cleaning tables at the neighborhood country club. I thought about going to cooking school but why when folks would pay me to learn so i traveled from restaurant to restaurant learning, teaching, drinking, and creating for the next 20 years.
I quit cooking for money in 1996 and have finally realized the true joy of cooking. I peruse food with passion... this website is dedicated to my kid. I try every day to get her to experience the joy of a good meal.
Along the way i picked up the handle TheHill from a dear friend and it stuck. The recipes on this site i do not take credit for. They are all stolen...but that's what chefs do. I once had a mentor tell me that cooking involved basic skills learn those and then the only difference between me and the greatest chefs in the world are recipes...and they write books.
My goal with this site is to discuss the how's more than the what's. Provide insight into what works for me and hopefully you. These are the recipes I use when I am cooking. I invite you to comment or share your thoughts with each.
Beyond that....Just take it easy man.
