  • 15 oz. solid white albacore tuna packed in water
  • 1/4 cup minced onion
  • 2 tablespoons olive oil
  • 1/2 teaspoon sugar
  • 1/2 cup + 2 tablespoons mayonnaise
  • 1 rib celery finely chopped
  • 1 teaspoon chopped parsley
  • 2 teaspoons fresh lemon juice
  • Salt and freshly cracked black pepper to taste

Procedure (a.k.a. The Magic)

  1. Dry That Tuna
  2. Start by pressing the tuna dry. Use a fine mesh strainer and some paper towels to get rid of excess water—think of it as a spa day for your tuna. Transfer the now-relaxed tuna to a medium bowl and gently flake it with a fork until it’s nice and fine.

  4. In a microwave-safe bowl, combine the minced onion and olive oil. Pop it in the microwave and cook for about 2 minutes, just until the onion starts to soften. Let it cool for about 5 minutes—this step gives the onions a mellow, sweet flavor.
