Ruben Casserole

Ingredients
- 12 oz. Sour Cream
- 14 oz. Sauerkraut, drained
- 12 oz. Swiss Cheese, grated
- 12 slices Beefsteak Rye bread, processed
- 1 large sweet onion, finely diced
- 1 teaspoon caraway seeds
- 24 oz. thinly sliced Corned Beef
- 8 T. Butter
- Thousand Island Dressing for topping.
Instructions
- Mix sour cream, onion and sauerkraut and spread in bottom of 9 x 13 pan.
- Crumble corned beef on top.
- Cover with swiss cheese.
- Cover with rye bread crumbs that have preen processed in a processor.
- Melt butter and drizzle over the top.
- Bake at 350 for 30 to 45 minutes until golden brown.
- Drizzle with 1000 Island Dressing.

Ok sauerkraut is the first hurdle but if they can get past that this is great. All the flavors of a well made ruben for a crowd. Travels well in a pyrex and washes down great with a newcastle.
