Roasted Maple Carrots with Browned Butter and Bacon

Ingredients
  • 2 lbs carrots fresh ones with the tops preferably
  • 5 oz. bacon lardons
  • 1 T water
  • 1½ t rendered bacon drippings
  • ½ t table salt
  • 1 T butter
  • 1 T maple syrup
Instructions
  1. Oven to 475-500 range
  2. add bacon and water to cold cast iron skillet
  3. stir to combine and cook, stirring as needed.
  4. remove bacon when crisp and add carrots and salt
  5. spread into single layer and roast 10 minutes.
  6. add butter and mix well cooking butter in the heated pan until browned.
  7. add maple syrup and coat carrots completely
  8. return to oven for about 8 minutes stirring once or twice or until GBD.
  9. add bacon back to pan and return to oven for 1 minute.
  10. serve
