Software (a.k.a. Ingredients)

  • 2 lbs Smart Chicken brand wing sections because we’re picky about our wings
  • Kosher salt don’t be shy
  • Black pepper season to your heart’s desire
  • Garlic powder more is better, right?
  • Canola oil to make sure they’re nice and crispy
  • Panda Express Teriyaki Sauce don’t overthink it, just go with the flow
  • Sesame oil a few drops for that rich, nutty vibe
  • Fresh ginger minced (bring on the zing)
  • Fresh garlic minced (because garlic is life)
  • Apple cider vinegar for a touch of tang
  • Worcestershire sauce because why not add a little mystery
  • Cayenne pepper for a kick—if you’re feeling spicy
  • Sesame seeds because we like a little crunch

Procedure (a.k.a. The Magic)

  1. Prepping the Wings: Take your chicken wings and toss them in kosher salt, black pepper, and garlic powder. Don’t measure—just go by feel, and let the wings sit at room temperature for about 1.5 hours. This helps them soak in those flavors and get ready to sizzle.
  2. Oil it Up: Now, toss those wings in canola oil, giving them a nice, even coat. You’re not deep-frying them, but you want them slick and ready for roasting.
  3. First Roast: Arrange your wings in a single layer on a rack. This part is important—no overcrowding! You want them crispy, not soggy. Roast them at 375°F for 25 minutes. They should be crisping up, and all that delicious fat will be rendered out.
  4. Sauce Creation: While the wings are roasting, grab a bowl and combine the teriyaki sauce, sesame oil, minced ginger, minced garlic, apple cider vinegar, Worcestershire sauce, and cayenne pepper. This is the sauce of dreams, so feel free to adjust it as you go. Taste it—make sure it’s the right balance of sweet, spicy, and savory. You’re the boss here!
  5. Second Roast (The Golden Moment): Once the wings are roasted to crispy perfection, toss them in your glorious sauce until they’re completely coated. Return them to the rack in a single layer again (no touching, these wings need their personal space). Roast them for about another 10 minutes until they’re golden brown and just begging to be devoured.
  6. The Final Touch: Once they’re out of the oven, sprinkle them with sesame seeds for a little crunch and extra flavor. And just like that—you’re ready to enjoy some of the best wings you’ve ever made.
