BEWARE

This Cinnamon Maple Butter is so addictively good that it should have a warning. The cinnamon just warms the flavor but totally allows the maple to shine.

Maple Butter
 
Ingredients
  • 8 oz grade A dark amber maple syrup
  • 1 two-inch cinnamon stick
  • 2 sticks softened butter (divided)
Instructions
  1. Pour maple syrup into a medium saucepan; add cinnamon.
  2. Bring to a boil over medium-high heat.
  3. Cook until a candy thermometer registers 240 degrees.
  4. Remove the pan from heat, discard cinnamon stick, and stir in 1½ sticks unsalted butter until melted.
  5. Immediately transfer to a stand mixer fitted with the paddle.
  6. Beat, starting on low for 1 minute then medium for 2 minutes and finally high for a full 5 minutes.
  7. Add the remaining ½ stick unsalted butter and mix until mixture is thick, opaque, and creamy
