Mmmmm...Butter Cake

MAKE THIS NOW! Browning the butter for this cake really makes this cake outstanding. Make sure to cool butter completely before adding to egg and sugar mixture.

Ingredients
  • 2 sticks unsalted butter
  • 1½ C AP flour
  • 1 C cake flour, not self-rising
  • 1½ t baking powder
  • ½ t salt
  • 1 egg, lightly beaten
  • 4 egg yolks
  • 1 C sugar
Instructions
  1. Brown Butter
  2. place 1 stick of butter in a cold skillet over medium low and all to melt completely.
  3. once melted turn heat up on pan to medium and swirl pan and allow the butter to brown
  4. allow butter to come to room temperature while browned butter cools to room temperature
  5. Prep tart pan, preheat oven
  6. preheat oven to 350
  7. butter a 9 inch removable bottom tart pan
  8. Dry Ingredients
  9. sift both flours salt and baking soda into a large bowl
  10. Wet Ingredients
  11. beat egg yokes and sugar on medium high for 3 minutes
  12. add butter to eggs in 4 batches making sure it fully incorporates
  13. add flour to butter sugar egg mixture and mix until smooth and no dry four remains
  14. transfer to pan and smooth top with offset spatula
  15. Final Preparation
  16. refrigerate cake for 30 minutes
  17. brush top of cake with beaten egg.
  18. create design in top of cake with back side of knife
  19. brush one more time with egg wash
  20. bake for up to 35 minutes. if top is browning too quickly cover with foil
  21. cool cake slightly on wire rack
  22. remove from pan and slice while still warm
