Ingredients
  • 12 oz. Sour Cream
  • 14 oz. Sauerkraut, drained
  • 12 oz. Swiss Cheese, grated
  • 12 slices Beefsteak Rye bread, processed
  • 1 large sweet onion, finely diced
  • 1 teaspoon caraway seeds
  • 24 oz. thinly sliced Corned Beef
  • 8 T. Butter
  • Thousand Island Dressing for topping.
Instructions
  1. Mix sour cream, onion and sauerkraut and spread in bottom of 9 x 13 pan.
  2. Crumble corned beef on top.
  3. Cover with swiss cheese.
  4. Cover with rye bread crumbs that have preen processed in a processor.
  5. Melt butter and drizzle over the top.
  6. Bake at 350 for 30 to 45 minutes until golden brown.
  7. Drizzle with 1000 Island Dressing.

Rubens For A Crowd!

Ok sauerkraut is the first hurdle but if they can get past that this is great. All the flavors of a well made ruben for a crowd. Travels well in a pyrex and washes down great with a newcastle.
